Building the Chili Flavor The sweet potato is&#160;the star ingredient as it balances the chili seasonings so well.&#160; Because I was making this chili to share the love with one my work family members, I kept the heat out of it and instead focused on flavor.&#160; Chili powder, ground oregano, garlic powder, and cumin will never let you down. I also fire roasted the corn and poblano peppers, adding a little smoky flavor to the chili. If you want to stretch this Turkey &#38; Sweet Potato Southwest Chili&#160;a little&#160;farther, double the quantity of veggies &#38; diced tomatoes and season accordingly.&#160; In addition to the sweet potatoes, I added carrots, onions, red bell &#38; poblano peppers, zucchini, corn, diced tomatoes and black beans. Add in remaining veggies and tomatoes, chiles, black beans and seasoning and bring to a gentle simmer; cook for 10 minutes.</span></div></li><li id="wprm-recipe-33109-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add cooked sweet potatoes and ground turkey to the pot; heat through. <p class="has-medium-font-size">Vegetarian Black Bean Chili is a delicious and satisfying meal.  It&#8217;s perfect for when the weather starts to turn towards fall and the leaves  remind us that Winter is coming. </p>

Add the diced carrots, celery and onion and saute until just tender, about 10 minutes. Stir in the garlic for 1 minutes then add the spices and stir to coat vegetables.  Add the broth, black beans and tomatoes and bring to a simmer.  Cook for 20 minutes.  Remove 3 cups of soup mixture to a blender and puree, then return to soup pot. Place flour in a baking dish. Bake for 1 to 1 1/2 hours until golden brown, stirring every 20 minutes.</div></li><li id="wprm-recipe-32010-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Meanwhile, remove stems and seeds from dried peppers and chop them fine. Place in bowl and pour in beer. Heat over medium heat, turning once until water evaporates. Remove sausage and slice them. Brown them in oil then remove from the pan. Add cumin to pan and toast for one minute before adding ground beef. Season beef with salt &amp; pepper and brown. Remove from pan and reserve with Andouille.</div></li><li id="wprm-recipe-32010-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the onions to the pan and cook them for 5 minutes. Add in celery, jalapenos and garlic; cook mixture until just softened. Add the vegetable oil, toasted flour and chili powder; stir for 3-4 minutes.</div></li><li id="wprm-recipe-32010-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add in diced tomatoes, chilis and beer, and cooked meats with their juices. Add 3 cups of beef broth, red wine vinegar and 3 Tbl. Cajun seasoning (or more to taste). Simmer for at least 30 minutes. We like our salsa a little bit chunky when serving with chips.&#160; So just several good pulses in the blender or&#160;Vitamix&#160;until the desired consistency is reached.&#160; If you have time, chill the salsa for an hour or so before serving to let all the flavors come together.</p>

<p class="has-medium-font-size">We like our salsa a little bit chunky when serving with chips.&nbsp; So just several good pulses in the blender or<em>&nbsp;Vitamix&nbsp;</em>until the desired consistency is reached.&nbsp; If you have time, chill the salsa for an hour or so before serving to let all the flavors come together.</p>

Our Sausage &#38; Thyme Cassoulet finishes in a slow oven for at least an hour.&#160; Yes, if you wanted to make this a quick weeknight meal, the vegetables could be simmered on the stove top until just tender then finished in the oven.&#160; I&#8217;m a fan of letting it go low and slow until some of the ingredients start to break down and meld their flavors. In a heavy bottom pan, heat 1 Tbl. olive oil over medium heat. Add sausage and cook through, breaking up with a wooden spoon during cooking. Remove sausage to drain on paper towels. Pour off fat from pan.</div></li><li id="wprm-recipe-32043-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add 1 Tbl. olive oil to pan, sauté onion, carrot, and sweet potato for about 5 minutes. Add in cooked sausage, kale, beans, diced tomatoes with juice, chicken broth, thyme, and seasonings. Cover; bring to a boil, then reduce heat to low and cook for 10 minutes. Remove from heat.</div></li><li id="wprm-recipe-32043-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Preheat oven to 325 degrees. Combine breadcrumb ingredients and sprinkle on top of casserole. Bake uncovered for 1 hour or until vegetables are very tender.</div></li></ul></div></div>

This Chickpea &#38; Spinach Stew, adapted from Weight Watchers,&#160;is going to keep me on track.&#160; This recipe is so easy I prepared (and pictured)&#160;it during my lunch break, in the kitchen at my office.&#160; We&#8217;re talking easy, tasty and filling.&#160; Cumin, ginger, lemon juice and fresh cilantro give this stew it&#8217;s bright flavor.&#160; Chickpeas, diced tomatoes and fresh spinach give it the protein and nutrients to sustain you throughout the afternoon.
