Oven ‘Fried’ Chicken {with Sriracha Honey}.

I’ve made this dish three times now trying to capture the right picture (still working on that).  Well and also because this chicken so goodThree times in 10 days good.  There’s one other reason.

Oven Fried Chicken

This Oven ‘Fried’ Chicken is first coated with dried herbs mixed with my new bff fat free Greek yogurt (I haven’t quite worked up to having it for breakfast but it’s a great way to make glorious panko bread crumbs stick to chicken).  Then the chicken is dredged in seasoned panko bread crumbs and baked with ‘no oil’ in a hot oven until crispy on the outside and juicy on the inside.  What does that all mean? 

And for the other reason I love this Oven ‘Fried’ Chicken {with Sriracha Honey}  ….. because it weighs in at 250 calories per serving and that includes the Sriracha Honey Sauce.  Your welcome.

Ingredients
  

For the chicken…

  • 2 boneless skinless chicken breasts pounded to about 1″ thickness and cut in half (you’ll end up with 4 approx. 5-ounce pieces)
  • 1/2 cup fat free Greek yogurt
  • 1 Tbl. dried sage
  • 1 Tbl. dried rosemary
  • 1 tsp. Mrs. Dash garlic & herb seasoning
  • 1/2 tsp. cayenne pepper
  • 1/2 cup whole wheat panko bread crumbs
  • 2 Tbl. flour
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 1/4 tsp. cayenne pepper optional

For the sauce…

  • 2 Tbl. Sriracha hot sauce
  • 2 Tbl. honey

Instructions
 

For the chicken…

  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
  • Place chicken breasts between two pieces of plastic wrap. Pound to an even thickness, about 1-inch. Cut each breast in half, yielding 4 pieces that are about 5 ounces each.
  • In a small bowl combine yogurt, dried herbs, Mrs. Dash, and cayenne pepper. In a separate shallow dish combine panko, flour, salt, paprika and cayenne pepper.
  • Fully coat each piece of chicken with the yogurt mixture than press each side into the panko crumbs; place on parchment lined sheet and bake for about 20 minutes until cooked through.

For the sauce…

  • While the chicken is baking combine the srirarcha and honey in a small bowl.
