Is it just me or do you agree that Meatballs are a Fabulously FUN Food? I think if I were going to have a Food Truck (and you know we’ve all secretly wanted to own a food truck), I’d make it all about the meatballs ~ Mobile Meatballs. The possibilities are endless. This simple dinner of Asian Salmon Meatballs over Cauliflower Fried Rice has got my wheels spinning.
Of course we’d have traditional Italian Meatballs…the kind I dream of…soft and bursting with garlic and herb flavors…bathed in a tomato sauce.
Turkey Meatballs would be delicious served bowl style with mashed potatoes and mushroom gravy.
We would certainly offer Swedish Meatballs in a warm gravy served over egg noodles with a hint of nutmeg smiling through.
My Mobile Meatball Food Truck would offer multiple serving options. You could pile your meatballs of choice on a salad, load them in a pita pocket, stack them on a stick, ladle over hearty grains, or serve them slider style like these Chicken Parmesan Meatball Sliders.
Thanksgiving Dinner Party Meatballs would be a hit all year round. Who doesn’t love the comfort of a holiday meal delivered in tasty bite-sized meatballs?!!
Looking for fresh bright flavors? Chicken Piccata Meatballs are loaded with aromatics. Comfort food without the guilt!
Our signature Turkey Burger Meatballs, oh so moist with a subtle sweet BBQ flavor, would be a featured item.
Our Salisbury Steak Meatballs would be a stick to your ribs favorite for certain.
Let’s not forget Buffalo Chicken Meatballs with hot wing sauce, North African Lamb Meatballs with a cilantro mint sauce, and Maryland Crab Cake Balls with remoulade sauce.
When our Fantasy Food Truck pulls up to the county fair, Spaghetti & Meatballs on a Stick are going to draw a crowd!!
In the cooler months, our meatballs would find their way into big bowls of soup. We’d have Lemon, Tortellini & Meatball Soup.
Italian Bean Soup with Mini-Meatballs would be a lunchtime favorite.
These rice and herb packed meatballs will find their way into steamy bowls of Albóndigas Soup {Mexican Meatball Soup}.
It’s the meatballs after all that completely make Italian Wedding Soup.
And rounding out our offerings would be these amazing Asian Salmon Meatballs with just the right balance of fresh cilantro and ginger served with a sesame soy honey ginger dipping sauce. Now who’s with me on this one?!!
- ⅔ lb. Salmon filet skin removed
- 3 scallions thin sliced
- ½ cup cilantro leaves rough chopped
- 1 garlic clove minced
- 1 tsp. soy sauce
- 1 tsp. sesame oil
- 1 tsp. sriracha
- 1 tsp. red curry paste
- 3 Tbl. panko breadcrumbs
- ¼ cup soy sauce
- 2 Tbl. sesame oil
- 2 Tbl. honey
- 1 Tbl. sriracha hot sauce
- 1 tsp. fresh ginger, grated
- ½ tsp. sesame seeds
- Preheat oven to 375 degrees.
- Line a baking sheet with parchment paper.
- Rough chop salmon in food processor.
- Combine all remaining ingredients, then add salmon and mix until just combined.
- Make into 12 - 15 meatballs and arrange on prepared baking sheet.
- Bake for 12 minutes.
- In a small saucepan, combine all ingredients and bring to a gentle boil.
- Spoon sauce over meatballs to serve.

Libby, I stumbled on this recipe searching for “Salmon Swedish Meatballs” which were recently served by a caterer at a party. How fortunate am I that this recipe came up in the search. These Asian Salmon Meatballs are out of this world. The only change I made to the recipe is omitting cilantro. I am one of those people that thinks cilantro tastes like soap. I cannot wait to make this again and I am really looking forward to trying your other recipes. You are a ingredients chemist!!

I made these tonight and they were absolutely delicious! We love salmon and we love Asian so this combination was perfect. They was just enough spiciness in the meatball and the sauce – we are wimps when it comes to spicy and I was worried when I saw all the Sriracha. We served them over rice and drizzled sauce over everything. Fantastic. Thanks for another winning recipe Libby.

can you use canned salmon in a pinch if you dont have filiet and do you have to use cilantro i dont like it.
Hi Lisa, I’m not sure you’ll get quite the same results with canned salmon but I wouldn’t pass up this dish if you can’t find fresh. You can definitely leave out the cilantro or perhaps replace it with parsley if you enjoy that. I hope you get the chance to make these and please share how they turned out. Thank you, Libby
Oh these do sound good, but I want all the other meatball recipes, too. I never ate the spaghetti, just the meatballs, sauce and good bread and butter.
