I decided to take my favorite slow cooker pot roast recipe and give it a complete makeover.  Bing, bam, boom.  Korean BBQ Beef.  Simple as that and oh so delicious.

Tender melt in your mouth beef swimming in a delicious sauce.  The marinade is slightly sweet with familiar flavors of ginger and sesame.  While the slow cooker method is not traditional for Korean BBQ it certainly turned this into a fantastic weeknight meal.  Serve over a bed of white rice or shredded and served in lettuce wraps.  Either way you’ll want a drizzle of the heavenly sauce.  Enjoy!

Korean BBQ Beef {in the Slow Cooker}

Ingredients
  

  • 1 2-1/4 pound beef chuck roast
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup apple juice
  • 2 Tbl. sesame oil
  • 1 Tbl. Mirin
  • 1 tsp. grated ginger
  • 2 garlic cloves minced
  • 1 onion thinly sliced
  • white rice or lettuce wraps for serving optional
  • thinly sliced scallion carrots and cabbage for garnish

Instructions
 

  • Place all ingredients in the slow cooker. Cook on LOW for 8 hours.
