BLT Stack {with Fresh Herb Mayo}

The tomatoes are coming, the tomatoes are coming.  Are you as ready as we are for some nice vine ripened heirloom tomatoes?  They are such a wonderful treat no matter how you serve them.  I decided to stack them up for fun and dress them with a little fresh herb mayo and crispy crumbled bacon.

For the fresh herb mayo...
  • ½ cup mayonnaise
  • 1 tsp. lemon juice
  • 2 Tbl. minced fresh herbs, like lemony thyme, basil, tarragon, parsley
  • freshly cracked pepper
For the BLT stack...
  • 2-3 assorted heirloom tomatoes, thick sliced
  • 4 strips cooked bacon, crumbled
  • 1 handful baby greens or fresh basil leaves
  • 2 Tbl. pepitas or sunflower seeds
For the fresh herb mayo...
  1. Combine all ingredients, refrigerate until ready to use.
For the BLT stack...
  1. Stack sliced tomatoes in a tower, alternating the tomatoes by variety. Sprinkle with fresh greens, crispy crumbled bacon, and pepita seeds, then drizzle with fresh herb mayo.
