4boneless skinless chicken breastsabout 5 oz. each
1medium onioncut into small wedges
2Tbl. fresh basilchopped (or 2 tsp. dried)
1/2tsp.dried oregano
1/3cupdry white wineoptional
214.5 ounce cans diced tomatoes (no salt added)
115.5 ounce can white bean, rinsed and drained
1/2cupKalamata Olivesor to taste
zest of 1 lemon
2Tbl. fresh basilminced
Instructions
Put chicken breasts and next six ingredients (through white beans) into slow cooker. Cook on low for 8 hours.
Before serving add Kalamata olives or serve on the side. Serve in bowls with a sprinkle of lemon zest and minced basil. A side of crusty bread goes nicely too.
