Thank you Sandi. Yes, I think the seasoning under the fat cap was great. I like mine on the rare side, but my dad-in-law is more of a medium-well guy so we gave his a quick broil. We did have a very nice holiday and actually took some time off from over-cooking :) Hope you did as well. Looking forward to 2013!! Happy New Year.

Yours looks great. I like my meat medium so I left it in a bit longer. That is a good tip about cutting that flap of fat. I never thought of that but next time I will be doing it.
