Have you ever made it using frozen spinach? I have a partial bag of frozen I need to use up and wonder if it would change the final result?

I enjoyed this very much, and even more the next day in a pita. I exchanged bok choy leaves, the green part, for spinach because I am allergic to spinach. It is a great alternative. I used vegan feta from Trader Joes. It gives it a nice texture, but I suspect feta would carry a little more flavor in a meatloaf. I agree, there's much variety in feta. Some are quite sharp. Others not so much. I'll definitely be making it again.

I'm sorry you didn't enjoy this Roz. Perhaps it was the brand of feta - their 'tang' can vary greatly. It's a family favorite for us.

Did not enjoy the flavour combination. Feta cheese was bitter/sour tasting. Maybe better with mozarrella. I won't know because won't make it again. Waste of ingredients!!
