					<description><![CDATA[Ahhhhhh.....this was a great Saturday morning find!!! It generously serves four. I mixed in shredded Swiss cheese for about half of the cheddar, and it also had a great outcome. Play around with the peppers as you may like the variety of colors in sweet peppers as I do...you can always add the extra zing of red pepper flakes and even a few extra herbs  to pop the flavor. We loved this dish.....cooked it in an oblong casserole dish for about 40 minutes or so. We served it with a drizzle of sweet chili sauce over each serving. Yum!!!!!]]></description>

Hi Megan.  I have not made this and frozen it, but I will put the question out to our fb followers and see if anyone has experience with it.  Were you thinking of freezing the whole casserole before baking or freezing portions after baking?  Libby]]></description>
