adapted from Low Carb Friends - Bulletin Board
Whether your motivation is a low-carb lifestyle or just a way to sneak more veggies into your family's diet....this pizza crust is amazing.
Course Pizza

  • 1 1/2 cups cauliflower fine chopped
  • 1 cup mozzarella cheese shredded
  • 1 egg beaten
  • 1 tsp dried oregano
  • 1/2 tsp. salt
  • 1/2 tsp. garlic minced
  • Cooking Spray
  • Favorite pizza sauce toppings, and cheeses

  • Preheat oven to 450 degrees.
  • Cut cauliflower into smaller pieces, then chop fine in food processor.
  • Microwave cauliflower for 5-7 minutes until tender (no water needed), then let cool slightly.
  • Press cauliflower between paper towels to remove any excess moisture.
  • Mix cauliflower with remaining ingredients to make dough.
  • Coat pizza pan or baking sheet with cooking spray.
  • Form mixture into 9"-10" circle on pan.
  • Bake for 12-15 minutes until crispy brown.
  • Loosen crust with spatula, then top with favorite pizza sauce, toppings, and cheeses. Broil pizza just until cheese is melted and lightly browned.

I transferred to the crust to a pizza stone before broiling to help the crust remain crispy.
For flavor variations - change up the herbs and even the cheese used in the crust.
