Whisk together eggs, cream, herbs and seasoning. Dredge bread slices in egg mixture turning several times until each slice is soaked.
Melt butter in skillet over medium heat. Add soaked bread slices, sprinkle tops of each slice with about 1 Tbl. of parmesan cheese. Pan fry until golden brown. Turn slices, sprinkle each with additional parmesan cheese. Pan try until golden brown.
Serve topped with a spoonful of balsamic onion jam, sprinkle of parmesan, and fresh snipped chives.
