Ingredients
  

For avocado Caesar dressing...

  • 1 avocado
  • 4 Tbl. Caesar dressing

For the healthy southwest burrito bowl...

  • 6-8 ounces cooked chicken breast sliced
  • 3 cups fresh spinach leaves
  • 1 cup cooked pinto beans
  • 1 cup cooked brown rice
  • 1/2 cup corn kernels
  • 1/4 cup shredded cheese
  • 10-12 cherry tomatoes halved
  • fresh salsa
  • lime wedges

Instructions
 

  • Cut avocado in half, discard pit. Scoop out flesh and slice half for Burrito Bowls. Blend other half with Caesar dressing and reserve.
  • Divide remaining ingredients between two bowls. Serve with Avocado Caesar Dressing.
