Cauliflower Rice

Ingredients
  

  • 1 head cauliflower
  • 1 Tbl. olive oil
  • salt & pepper to taste

Instructions
 

  • Cut cauliflower into florets, removing tough center core. Process in food processor, using pulse feature until cauliflower resembles rice sized pieces.

For microwave method...

  • Place cauliflower in a microwavable safe bowl. Add 2-3 Tbl. water. Cover with plastic wrap and microwave on HIGH for 3-4 minutes. Drain off water. Season with salt & pepper to taste.

For stovetop method...

  • Heat Tbl. of olive oil in a covered skillet over medium heat. Add chopped cauliflower and sauté covered for 5-7 minutes. Season with salt & pepper to taste.
