Preheat oven to 400 degrees.
Toss tomatoes, onion, and zucchini in olive oil, then sprinkle with oregano, salt, and pepper. Roast on a foil lined pan for about 20 minutes, until onion is tender and tomatoes begin to burst.
Warm tortillas in a oiled skillet, turning once until just starting to lightly brown. Remove and fry eggs.
On plate, layer tortilla with roasted veggies and fried eggs. Sprinkle with cilantro, scallions, jalapeno, cheese, and a dollop of sour cream.
