Watermelon Salad.  Simple, yet so refreshing.  A perfect bite-sized summer appetizer.

Chilled seedless watermelon cubes, crumbled feta cheese, sprinkling of fine diced red onion, drizzle of balsamic glaze, garnished with mint leaves.

    Had something similar at a recent country backyard wedding. I don’t believe they used the balsamic dressing or the onion though.

    I was visiting my daughter in Phoenix last week and the temp is well over a 100 now. She made a side salad of this recipe and added fresh basil and used goat cheese instead of feta. I’ve become a recent fan of this site and have told her about Lemony Thyme. I’ll make sure she sees this easy appetizer!! Thanks for the inspiration!

        I meant to say she used goat cheese, basil and mint. The combo was great! Will try balsamic next time for added touch!! Will try balsamic glaze next time
