When I discovered it was National Pie Day I also discovered that I do not have a single “Pie” recipe on Lemony Thyme.  I like pies, on occasion or for an occasion.  But I’m not drawn to them.  Pie crust on the other hand speaks to me.  And filled with something savory…well that’s when a pie becomes personal.  All that being said, I’m sharing a Boston Cream Pie Martini today.  Go figure.

~ Boston Cream Pie Martini ~

1 oz. Vanilla Vodka

1 oz. Chocolate Liqueur (such as Godiva)

1 oz. Irish Cream (such as Bailey’s or Saint Brendan’s)

Combine ingredients and chill 30 minutes.  Serve in a chocolate rimmed martini glass for an after dinner cocktail or dessert.
