Pierce sweet potato with fork several times. Cut top off head of garlic and drizzle with olive oil and wrap in foil. Place veggies and garlic on shallow rimmed baking sheet and roast for 45 &#8211; 50 minutes or until fork tender.</div></li><li id="wprm-recipe-33264-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Meanwhile, sauté onion in a heavy bottom pot or Dutch oven until tender.</div></li><li id="wprm-recipe-33264-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once done, remove roasted veggies from oven and allow to cool slightly. Using a fork or knife, scrape out the roasted flesh of the pumpkin, acorn squash, and sweet potato; add to the Dutch oven. Squeeze garlic head to remove roasted garlic; add to pot. Add broth, salt, pepper, nutmeg and cayenne pepper.</div></li><li id="wprm-recipe-33264-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bring to boil then reduce &amp; simmer for 10-15 minutes. Puree in batches in blender until smooth. Adjust seasoning to taste. Serve in individual bowls topped with toasted pumpkin seeds.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For cumin roasted pumpkin seeds&#8230;</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-33264-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Preheat oven to 350 degrees. Rinse pumpkin seeds to remove any pumpkin membrane. Dry between paper towels. Toss pumpkin seeds with olive oil, cumin and sprinkle of sea salt. Spread in a single layer on a shallow baking sheet. Roast for 8-10 minutes, stir then continue roasting 8-10 minutes. Keep an eye on them as they can go from perfectly golden brown to burned in a hurry. Allow to cool slightly before eating.</div></li></ul></div></div>

First the acorn squash are halved, seeds removed, oil rubbed, then roasted for 30 &#8211; 40 minutes (depending on the size of your squash) until they become fork tender.&#160; Meanwhile the corn pudding is prepared.&#160; Using the same ratio of milk and eggs as the original recipe I was able to then make some simple modifications.&#160; Instead of the corn being a subtle discovery I was quite fine for it to be a star.&#160; I also added curry powder and nutmeg&#160;to give the pudding a warm flavor. There was enough pudding to fill two small acorn squash (four halves) and two buttered ramekins.&#160; The curried corn&#160;pudding on it&#8217;s own&#160;will be a&#160;wonderful year round side dish.&#160; The pudding baked into the sweet acorn squash makes this a fabulous fall side or light meal.&#160; I can envision&#160;Roasted Curried Corn Pudding in Acorn Squash&#160;on my Thanksgiving table.</p>

Fill each squash cavity, being sure squash halves are level. Use foil to prop squash if necessary. If there is extra filling bake in a buttered ramekin along side the squash. 					<description><![CDATA[<p>I&#8217;ve been visiting the local farmers&#8217; market most weeks since it opened back in June.&#160; It has made quite an evolution over these very short 8+ weeks.&#160;&#160;What a treat to find these babies nestled in a basket at this week&#8217;s market.&#160; Could it be fall is just around the corner?&#160; I will be sad to see the summer produce go, but my fall recipe folder is exploding with ideas!! Baked Acorn Squash just says LOVE to me.&#160; Growing up I&#160;remember Baked Acorn Squash being served as a side dish.&#160; I also remember eating every bite of it before ever being aware anything else was on my plate.&#160; It&#8217;s hard to categorize&#160;it as a vegetable or side dish when it could easily be savored as dessert.&#160;When maple syrup meets brown sugar it&#8217;s reminiscent of the maple sugar candies we grew up on.&#160; A visit back to New England wouldn&#8217;t be complete without finding these melt in your mouth treasures.</p>
