A Cushaw is larger and has green and cream/white vertical stripes. It is sweet and usually used in pie making. Thanks for sharing.

The squash was given to me by the lady who grew it in her garden. It was similar to a butternut but different. Very tasty in this orzo dish.

I have never seen one that color, that looks like a large butternut squash… All of the cushaw I have grown and cooked with are green/white and can also be an orang-ish/white stripe as well. I find your recipe interesting anyway, and look forward to trying it.
