Where to begin?

To me sliders represent exactly the way I want to eat.  A couple bites of delicious and I’m ready to move on to the next dish.  Small plates, tapas, appetizers to share all suit me just fine.  And for my friends and family, you know if we have a meal together, I’m going to want a bite of whatever you’re having.  Thank you for always sharing.

Korean Pork Buns

Pre-blogging days, when I was just an adventurous eater, I tried my hand at Homemade Korean Pork Buns.  It was my first experience with Kimchi and I must say quite an eye opener.  I have since grown to love the punchy, spicy sour taste.  It’s wonderful in soups, rice dishes, omelets and dumplings.  And it’s fantastic piled on top of sweet & spicy Korean pork and served as a slider.

While I’ve yet to attempt making Homemade Kimchi, my friend Nicole with My Love for Cooking has this wonderful recipe for Stuffed Cabbage Kimchi on her blog.  It’s a must make.

Last summer I was flipping through my Bon Appétit magazine and an article caught my attention.  The BA Test Kitchen selected Our 8 Favorite Kimchi Brands from Across America.  Much to my delight one of their Top 8 favorites was made here in Atlanta ~ Simply Seoul.

Flash forward a year, Shelby and I are strolling through her neighborhood Farmers Market and happen on the Simply Seoul stall, serving samples.  I should have bought two jars.

I came through the door with my prize from the market and suggested that we give Korean Pork Buns another try.  Korean Pork & Kimchi Sliders to be more precise.  I can even make Homemade Slider Buns.  And so I did.

And then I piled them high with sweet & spicy, slightly sticky, tender pork.  Topped with a generous spoonful of heavenly kimchi, fresh cilantro, and a good schmear of mayonnaise.  OH my!

Korean Pork & Kimchi Sliders

Ingredients
  

For the marinade…

  • 3 Tbl. soy sauce
  • 3 Tbl. sesame oil
  • 3 Tbl. brown sugar
  • 3 Tbl. apple cider vinegar
  • 3 Tbl. ketchup
  • 3 garlic cloves minced
  • 1 Tbl. freshly grated ginger
  • 1 Tbl. sriracha sauce or more to taste
  • 1 lb. pork tenderloin

For the sliders…

  • Homemade Slider Buns see recipe link in post
  • mayonnaise
  • 1 jar favorite kimchi
  • fresh cilantro

Instructions
 

  • Combine marinade ingredients in a large zip top bag. Add pork tenderloin and allow to marinade for 4-6 hours in refrigerator. Slice pork into strips and sauté in skillet or wok with a little remaining marinade until cooked through; 15-18 minutes.
  • To serve, slice slider buns and spread mayonnaise on each side. Pile on pork slices, kimchi, and fresh cilantro. Prepare to be amazed.
