Fresh Herbed Butter & Oils

Now you can have fresh herb flavors in the Winter Thyme too!! 

Freezing the herbs in olive oil or unsalted melted butter allows the herbs to keep their color and aroma. 

Just pop them out of the freezer to start any sauté or savory dish.  Just brilliant!

Steps to freeze the herbs in olive oil or unsalted butter

1. You can chop them well, or leave them on branches or as larger leaves.
2. Place in ice cube trays (about 2/3 full of herbs).
3. You can mix herbs (sage, thyme, rosemary, oregano).
4. Pour extra virgin olive oil or unsalted melted butter over the herbs.
5. Cover with plastic wrap and freeze.
6. Remove frozen cubes and store in small containers or bags in freezer.
7. Be sure to label each container or bag with the type of herbs (and oil) inside!
8. Use to add fresh herb layers of flavor to dishes all Winter long.

Because our herbs are still thriving, I used this as a chance to harvest some of our more abundant varieties, especially rosemary, oregano, and thyme. 

One of our favorite herb combinations is what we call the Simon & Garfunkel (parsley, sage, rosemary, and thyme) and so I filled a few spots in their honor, some with olive oil and some with butter. 

We also love oregano and lemon together so it seemed perfect to fill a couple spots with my new fav from Eureka Lemon Extra Virgin Olive Oil.

    Love the idea of preserving the summer bounty of herbs this way. I also get fresh garlic in the fall and preserve it in trays with olive oil.

      Love the idea of freezing garlic!! Do you mince it and put it in ice cube trays to freeze? I had another reader tell me about drying scallions and then also saw about freezing scallions in a plastic water bottle. The internet is such a great way to share tips and tricks.
