Salmon with Roasted Vegetable Orzo

Ingredients
  • 2 6-ounce salmon fillets
  • ½ tsp. Mrs. Dash Garlic & Herb Seasoning
  • sea salt & freshly cracked pepper
  • 2 shallot, sliced
  • 1 ear corn, kernels removed
  • 1 cup cherry tomatoes
  • ½ cup snow pea pods
  • ¼ cup frozen peas
  • 2-3 garlic cloves
  • 2 Tbl. olive oil
  • 1 sprig lemony thyme, rosemary, or oregano
  • sea salt & freshly cracked pepper
  • 1 cup orzo
Instructions
  1. Preheat oven to 400 degrees.
  2. Sprinkle salmon fillets with Mrs. Dash, salt & pepper and place on a foil lined baking sheet coated with cooking spray.
  3. Gently toss vegetables with garlic, olive oil, herbs, salt & pepper and add to the baking sheet.
  4. Baked for 17 - 20 minutes.
  5. Meanwhile, prepare orzo according to package instructions. Season with a drizzle of olive oil, salt & pepper.
  6. To serve, top cooked orzo with salmon fillet and roasted vegetables.
