Cheesy Beef Enchilada Dip

Serves: 8
  • 1 lb. ground beef
  • 1 cup enchilada sauce
  • 1 cup diced onion
  • 2 jalapeno, finely diced
  • 1½ cups shredded cheese (cheddar/Monterey jack blend)
  • tortilla chips to serve
  1. Brown ground beef over medium heat, breaking into small pieces with wooden spoon; drain.
  2. Add diced onion and jalapeno and sauté until tender, about 3-4 minutes.
  3. Stir in enchilada sauce and heat through.
  4. Add in half of the shredded and stir to combine. Top with remaining cheese. Cover and remove from heat.
  5. When cheese has melted serve with warm tortilla chips.
