Steamed Veggie Ramen Broth Bowl {with Fried Egg}

Per bowl...
  • 1 cup sliced veggies (such as carrot, zucchini, cabbage, broccoli)
  • 1 small handful fresh spinach leaves
  • 2 cups organic reduced-sodium vegetable broth
  • 1 pkg. ramen noodles
  • 1 Tbl. miso paste
  • ½ - 1 tsp. lower-sodium soy sauce
  • ½ - 1 tsp. sesame oil
  • 1 egg
  1. Place sliced veggies in a steamer basket over simmering water. Cover and steam until just tender, about 5 minutes
  2. Meanwhile, boil ramen noodles in vegetable broth, about 3 minutes. Remove from heat and whisk in miso paste, soy sauce and sesame oil. Pour into a bowl. Top with steamed veggies and fresh spinach.
  3. Prepare fried egg to desired doneness and place on top.
