Ingredients
For avocado Caesar dressing...
  • 1 avocado
  • 4 Tbl. Caesar dressing
For the healthy southwest burrito bowl...
  • 6-8 ounces cooked chicken breast, sliced
  • 3 cups fresh spinach leaves
  • 1 cup cooked pinto beans
  • 1 cup cooked brown rice
  • ½ cup corn kernels
  • ¼ cup shredded cheese
  • 10-12 cherry tomatoes, halved
  • fresh salsa
  • lime wedges
Instructions
  1. Cut avocado in half, discard pit. Scoop out flesh and slice half for Burrito Bowls. Blend other half with Caesar dressing and reserve.
  2. Divide remaining ingredients between two bowls. Serve with Avocado Caesar Dressing.
