Roasted Veggie Oven Hash {with Fried Eggs}

Ingredients
  • 2-3 cups fresh diced veggies (such as sweet potato, zucchini, onion, corn, shallot, jalapeno)
  • 1-2 Tbl. olive oil
  • salt & pepper
  • fresh herbs (such as thyme or sage)
  • 2 eggs
Instructions
  1. Preheat oven to 400 degrees.
  2. Dice vegetables according to required cooking time. For example, sweet potato should be cut smaller than zucchini since they require longer cooking time. Toss veggies with olive oil, salt, pepper and any additional herbs or seasonings. Spread in a single layer on a shallow baking sheet.
  3. Roast for 20 - 25 minutes or until vegetables begin to caramelize and are tender; stirring midway through cooking.
  4. Just before hash is finishes, fry eggs and serve on top.
Notes
Microwaving the sweet potato for 2-3 minutes will make it easier to peel and start the cooking process.
