Cauliflower Rice

Serves: 4-6
  • 1 head cauliflower
  • 1 Tbl. olive oil
  • salt & pepper to taste
  1. Cut cauliflower into florets, removing tough center core. Process in food processor, using pulse feature until cauliflower resembles rice sized pieces.
For microwave method...
  1. Place cauliflower in a microwavable safe bowl. Add 2-3 Tbl. water. Cover with plastic wrap and microwave on HIGH for 3-4 minutes. Drain off water. Season with salt & pepper to taste.
For stovetop method...
  1. Heat Tbl. of olive oil in a covered skillet over medium heat. Add chopped cauliflower and sauté covered for 5-7 minutes. Season with salt & pepper to taste.
