Southwest Baked Potato {with Cottage Cheese}

  • 1 Perfectly Baked Potato
  • ½ cup Fresh Tomato Salsa
  • ¼ cup fresh or frozen corn kernels, thawed
  • ¼ cup black beans, drained and rinsed
  • 4-ounces Fat Free Cottage Cheese
  • fresh cilantro
  1. Preheat oven to 400 degrees. Scrub potato under running water. Pierce several times with a fork. Bake for one hour or until soft.
  2. Slice down center of potato and fluff potato with a fork. Combine salsa with corn and black beans. Top potato with cottage cheese and salsa mixture. Garnish with fresh cilantro.
