Steamed Asparagus with Fried Egg & Shaved Parmesan Cheese

  • ½ lb. asparagus
  • 1 Tbl. olive oil
  • 4 eggs
  • 2 Tbl. shaved Parmesan cheese
  • chives, snipped
  • lemon zest
  • salt & pepper
  1. Remove though ends of asparagus. Then steam asparagus until just tender, about 5-7 minutes, depending on size.
  2. Fry eggs in olive oil to your desired liking.
  3. Serve fried eggs over steamed asparagus. Sprinkle with shaved Parmesan cheese, snipped chives, a bit of lemon zest, salt & pepper.
