Steamed Asparagus with Fried Egg & Shaved Parmesan Cheese

- ½ lb. asparagus
- 1 Tbl. olive oil
- 4 eggs
- 2 Tbl. shaved Parmesan cheese
- chives, snipped
- lemon zest
- salt & pepper
- Remove though ends of asparagus. Then steam asparagus until just tender, about 5-7 minutes, depending on size.
- Fry eggs in olive oil to your desired liking.
- Serve fried eggs over steamed asparagus. Sprinkle with shaved Parmesan cheese, snipped chives, a bit of lemon zest, salt & pepper.
