Oven 'Fried' Chicken {with Sriracha Honey}

Serves: 4
For the chicken...
  • 2 boneless skinless chicken breasts, pounded to about 1" thickness and cut in half (you'll end up with 4 approx. 5-ounce pieces)
  • ½ cup fat free Greek yogurt
  • 1 Tbl. dried sage
  • 1 Tbl. dried rosemary
  • 1 tsp. Mrs. Dash garlic & herb seasoning
  • ½ tsp. cayenne pepper
  • ½ cup whole wheat panko bread crumbs
  • 2 Tbl. flour
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. paprika
  • ¼ tsp. cayenne pepper, optional
For the sauce...
  • 2 Tbl. Sriracha hot sauce
  • 2 Tbl. honey
For the chicken...
  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
  2. Place chicken breasts between two pieces of plastic wrap. Pound to an even thickness, about 1-inch. Cut each breast in half, yielding 4 pieces that are about 5 ounces each.
  3. In a small bowl combine yogurt, dried herbs, Mrs. Dash, and cayenne pepper. In a separate shallow dish combine panko, flour, salt, paprika and cayenne pepper.
  4. Fully coat each piece of chicken with the yogurt mixture than press each side into the panko crumbs; place on parchment lined sheet and bake for about 20 minutes until cooked through.
For the sauce...
  1. While the chicken is baking combine the srirarcha and honey in a small bowl.
