Crisp Cod Cakes {with Peach Basil Relish}

Ingredients
For Peach Basil Relish...
  • 2 large peaches, pitted and cut into ¼" dice
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh mint, chopped
  • 1 shallot, finely chopped
  • 2 tsp. lemon juice
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. honey or agave nectar
For Cod Cakes...
  • 1 lb. cod fillet, skinned and cut into small pieces
  • 1 shallot, chopped
  • 2 Tbl. fresh parsley
  • zest of ½ a lemon
  • ½ tsp. salt
  • ¼ tsp. pepper
  • pinch cayenne pepper
  • 2 tsp. olive oil
Instructions
For Peach Basil Relish...
  1. Combine all ingredients in a serving bowl and reserve.
For Cod Cakes...
  1. In a food processor, combine cod, shallot, parsley, lemon zest, salt, pepper and cayenne. Pulse until finely chopped. With damp hands form mixture into 4 (1/2" thick) patties.
  2. Heat oil in a non-stick skillet over medium high heat. Cook patties until browned and cooked through, about 6 minutes per side.
  3. Serve with Peach Basil Relish
