Another five-star recipe! I had left-over wild rice to use and found this recipe. I purchased a rotisserie chicken and shredded it up. I didn’t have any frozen peas so I subbed in edemame (soy). Oh my goodness … it turned out soooo good. Thank you again for a great recipe.

In reply to libby. YES - it was delicious!!! I grew up in NC where everyone cooks a ton of casseroles & chicken casserole was always one of my favorites! I love this healthier option! I made it with whole wheat flour & whole wheat bread crumbs. SO GOOD!!!! Thank you!!!!

Hi Libby! I just got through making this recipe (it’s in the oven) – it smells so good! I got to the point where you add in the cheeses & realized that I hadn’t done anything with the mushrooms, yet. I reread the recipe & sure enough, you didn’t instruct when to add them in. So I sauteed them in a seperate pan & then added them into the mixture just before the chicken, peas & rice. Just wanted to let you know. I’m guessing, now, that they are supposed to be sauteed with the onions, carrots & celery? Just wanted to let you know so you can add that step in there! Can’t wait to eat it!!!! Thanks so much! :o) Jen
