In reply to Tony. The key is to fully encase the frozen butter with the chicken. Then the double breading seals all the cracks. Freezing the chicken before frying helps keep everything in place. All four of mine stayed in tact. Let me know how it turns out for you.

Great recipe! Thanks for sharing. But I don’t understand how to keep the butter inside from spilling when you fry the chicken breasts.

In reply to Louise. I would go ahead and brown them in oil before freezing. The place them frozen into a 400 degree oven for 30 minutes or until internal temp reaches 165 degrees.
