I ordered a Cucumber Basil Martini at the Mayan Kitchen restaurant in Chattanooga and knew instantly I’d have to recreate it at home.Continue reading »

We LOVE Publix Mardi Gras Wings. Any time I have to run to the grocery store for a last minute ingredient I can count on someone shouting to me as I go out the door, “pick up a couple Mardi Gras Wings.” I have all I can do not to eat them on the drive home. Their aroma alone makes my mouth water. Continue reading »

Most days, whether at home or the office I’ll have an Egg White Omelet Bowl for breakfast. A bed of spinach (getting my calcium anywhere I can), a drizzle of olive oil, a sprinkle of fresh herbs and scallions, and an egg white omelet packed with herbs. Today, my herb of choice was Thai Basil which is thriving in our Aero Garden presently. This Thai Basil Egg White Omelet Bowl fits in so nicely with my Healthy Choices plan. Continue reading »

We have babies. Hydroponic Herb Babies. And today was our first harvest, Basil. We used the most tender delicious basil leaves in this Lemon Basil Shrimp & Pasta recipe I found in Cooking Light. Continue reading »

Every once in a while the stars and the moon align and we stumble upon USDA ‘Prime’ Beef at our wholesale club. Typically reserved for restaurants, Prime beef is a high quality ultra tender grade. And for me tender is where it’s at. Continue reading »

I had seen a recipe in a cooking magazine where they sprinkled watercress leaves over the top of the dish. It made such a pretty presentation that I was certain I too would do this. I bought a bag of watercress with good intention. Forgot all about it until my weekly Saturday morning fridge cleanout. Continue reading »
