I believe the steep price tag is what keeps me from eating them every day. But I do love them. We bought eight (should have bought more) and decided to prepare them two ways.

We celebrated Shelby’s birthday last evening. When I asked her what she’d like for dinner she said “one of your amazing Ribeye steaks.” To which I gladly obliged. As soon as we sat down she said “you’ve got to try their Ceviche.” I had no idea she shared my love for this chilled seafood salad.

Sea Scallops. Sweet. Juicy. Hint of ocean breeze. Is it wrong that I’ve put Whole Foods on my list of things I’m thankful for? Whole Foods inspires me in many ways….to try unique produce items, to dabble in International cooking, to grow bamboo, to someday cook a whole fish (head on), to eat more whole grains, to drink better wine….I could go on and on.

Pan Seared Sage Brown Butter Scallops {with Sweet Pea Puree}. Not sure if I need to say more. LOVE the Sea Scallops, they are such a huge treat. Simply pan searing them with a sprinkle of salt & pepper is all they really need….but huh huh we gave them a little more. If you’re going to sear them in butter anyway, why shouldn’t it be in that seductive favorite Sage Brown Butter.

Just a little appeteaser… Start with beautiful sea scallops, rinse and pat dry. For these I lightly rolled the edges of the scallops in some sea salt and freshly cracked pepper. Set aside while you make pesto.

As I prepared to head to the grocery store on Sunday morning, there was an abrupt change of plans. “You know what, pick up a Ribeye for dinner. That would be a lot easier than the lasagna.” As you wish. Hmmp. Since when has easy been my reason for cooking?
