I knew at that moment my first dish baked in this vessel would be Roast Chicken. As I’ve commented on in the past we cook a whole chicken almost every week. We change up our recipes and cooking methods and it’s always delicious.

Now you can have fresh herb flavors in the Winter Thyme too!! Freezing the herbs in olive oil or unsalted melted butter allows the herbs to keep their color and aroma. Just pop them out of the freezer to start any sauté or savory dish. Just brilliant!

I saw these Chocolate Chip & Oreo Caramel Brownies on Pinterest from the site Betchacanteatjustone and immediately pinned it to wait patiently for the right occasion. These brownies are dangerous and should not be left unattended…they will disappear and potentially wreak havoc. Which is precisely why I made them to bring to my tennis match.

Whenever I have the opportunity to cook for a group, small or large, I love to try something new. It’s risky (if it flops) but measuring the mmmm mmm good tells you best whether it’s a keeper or history.

Creating wonderful vinaigrettes or marinades is so easy when you have these beautiful ingredients to work with. I started with Peppercorn & Balsamic Poached Pears which yielded a wonderful balsamic reduction to use as the base for my vinaigrette.

I discovered a lovely new shop for premium olive oils & balsamic vinegars. I came home with Blackberry Ginger Balsamic, among others. The flavor is so wonderful. Sweet, yet balanced by vinegar tart with a smooth finish. I’m now on a mission to come up with as many ways to incorporate it into my meals as possible.

Chicken Parmesan {Share the Love}
Chicken Parmesan over pasta makes me comfortable and happy. Today I delivered it to a friend with hopes it does the same for her :) Chicken breasts, lightly breaded, pan browned, topped with a basic tomato sauce, mozzarella & Parmesan cheese. Easy comfort.
